@SoonerI dont know your answer, but if they come vacuum packed, you can do it now for sure.

I also dont know the rules for freezing ham, but if it were any other meat, Id wouldnt wait 5 days to freeze any of it. When I pretty much know Ill be freezing some, I freeze a chunk as soon as I can on the theory that the fresher it goes into the freeze, the better it will be when I take it out to use it.

Hopefully someone way more knowledeable about ham will answer you soon.
