Ingredients

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable or olive oil
  • 4 cups fresh broccoli florets

  • Stir fry sauce:
    • 1 cup water
    • 1/2 cup low sodium soy sauce
    • 2 tablespoons brown sugar
    • 1 teaspoon ground ginger
    • 2 tablespoons cornstarch

  1. Cook ground turkey in a skillet over medium-high heat until browned and crumbled. Drain fat and set turkey aside.
  2. In the same pan, cook broccoli and onion in oil for 4-5 minutes until crisp-tender.
  3. Make stir fry sauce by whisking water, soy sauce, brown sugar, ginger and cornstarch.
  4. Add sauce to veggies and cook 1-2 minutes until thickened.
  5. Add cooked turkey back to pan and toss everything to coat in sauce.
  6. Serve over rice.

2. Ground Turkey and Broccoli Pasta

This one-pan pasta dish is ready in under 30 minutes. The garlic, lemon and Parmesan give it tons of flavor. It’s hearty enough for a main course but can also be served as a side.

Ingredients

  • 1 pound ground turkey
  • 3 cups broccoli florets
  • 8 ounces pasta (penne, rotini or ziti)
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup Parmesan
  • Juice and zest from 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
  2. In a large skillet, cook ground turkey over medium-high heat until browned, about 5 minutes.
  3. Add broccoli and garlic to pan and cook 3 minutes more.
  4. Add cooked pasta, lemon juice, lemon zest, Parmesan, olive oil and pasta water. Toss to coat.

  • 3 cloves garlic, minced

  • 4 medium russet potatoes, baked

  • 2 cups broccoli florets, steamed and chopped
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F.
  2. Slice potatoes in half lengthwise and scoop out flesh into a bowl, leaving about 1/4-inch of potato in skins.
  3. Mash potato flesh with butter, milk, salt and pepper.

  5. Spoon mixture back into potato skins.
  6. Bake 15 minutes until heated through.

  3. Add tomatoes, basil, salt and pepper. Simmer 15 minutes.
  4. Use a fork to scrape out spaghetti squash strands into bowls.
