- Combine all of your favorite leftovers in a bowl.
- Spoon about 1/4 cup mixture into bottom third of egg roll wrapper.
- Dip your finger in a small bowl of egg wash (water and eggs) and run it along the edges of the wrapper. Lift the side nearest you and wrap it around the filling. Fold the left and right corners in towards the center and continue to roll into a tight cylinder. Set aside and repeat with remaining wrappers and filing.
- Preheat air fryer to 400.
- Spray all sides of the roll with oil. Working in batches, arrange a single layer of the rolls in the air fryer basket. Cook for 8 minutes, flipping halfway, until browned.
Before you put your egg rolls into the Air Fryer, be sure to spray all of the sides so nothing sticks.
We are big fans of using the Air Fryer and Phi usesthis one. But if you don’t have an Air Fryer, you can certainly bake these on a sheet pan in the oven. They will just take a bit longer to crisp up!
