In a 6- to 8-quart pan over high heat, bring 3 to 4 quarts water to a boil. Add rice noodles and stir to separate; cook until barely tender to bite, 2 to 3 minutes. Drain. If not using immediately, rinse well to keep noodles from sticking together, and drain again.

How to Prepare Rice Noodles

Compared to wheat noodles, rice noodles are much more delicate and thin. They become so simple to prepare as a result that we hardly consider it to be cooking.

Even if your noodles are perfectly cooked when you first prepare them, the stir fry will make them mushy. We can’t tell you how many times we’ve done that, so trust us!

• You can cook the noodles in the broth when making a soup. Just before serving, add them, and watch them carefully to prevent overcooking.

• After draining the noodles, they still have a tendency to clump up even with a little sesame oil. Once you incorporate the noodles into your dish, they will become looser once more.
