I had been eating ramen and pho for lunch at a restaurant close to my place of employment, but I had a sneaking suspicion that the broth must have contained some ingredients that weren’t good for you.

I questioned the staff, and they assert that this food is healthy. I made the decision to take matters into my own hands and create a version that I can feel good about eating, regardless of whether their broth is magical or whether their definition of healthy differs from mine. And rather than estimating points, I can feel good about tracking in the Weight Watchers App because I know exactly what’s in it.

I like to immediately transfer half to a Tupperware for dinner the following day. I’ll only cook one egg unless I’m sharing with someone, and then when I’m ready to eat the other half, I’ll cook another egg. Not sure how well soft-boiled eggs can be reheated… Advertisement.

Ingredients (makes 2 servings, 8 SmartPoints™ per serving):

  • 1 packet Maruchan Ramen Noodles, chicken flavor – 6 points/serving
  • 2 eggs – 2 points/ea.
  • bell peppers, frozen or fresh – 0 points
  • ginger (tip: buy fresh, peel, then freeze for easy grating) – 0 points
  • onions – 0 points
  • mushrooms – 0 points
  • broccoli, frozen or fresh (not pictured, happened to be fresh out) – 0 points
  • Salt, pepper, Sriracha to taste
  • Directions:

  • Add all veggies to a large saucepan and cook until browned
  • Grate fresh ginger, add to saucepan
  • Add water for noodles and bring to boil
  • Add chicken flavoring to boiling water
  • Add noodles to boiling water and cook based on instructions
  • In a separate pot, cook egg to preference (I like soft boiled and use an egg timer–greatest kitchen invention ever)
  • When egg is ready, remove from boiling water, submerge in ice water, and peel
  • Assemble bowl
  • Season to taste with salt, pepper, and/or Sriracha
  • Divide into 2 dishes, serve, and enjoy.
